What do you think of rice salads? I’m a total rice girl. I love anything rice or noodle-y. My daughter is the same. 😋 In fact,I pretty much need rice as a side for everything!

Our new #creativefoodmemories challenge is building up to the Fourth of July and we’re experimenting with bbq potluck foods! I made this side salad using @eatbanza chickpea rice and since chickpea salad and rice is one of my favorites, this salad just made sense!
.
Here’s how I made it more kid-friendly.
🍇I made a simple, not too overpowering dressing with a simple 3:1 lemon and olive oil dressing. I added some salt and pepper and a tsp of maple syrup.
🍇I sliced grapes length-wise and added it to the salad.
🍇I chopped the kale and cabbage very finely.
🍇Sliced cucumbers small and thin.
🍇And added some dried cranberries and crunchy pumpkin seeds.
🍇The chickpea rice was so good. It has the texture of rice which is always a win for kids and didn’t taste like chickpea at all if your kids aren’t fans of chickpea!

To make this salad, just bring 6 cups of water to a boil. Add the chickpea rice and let it simmer for about 5-6 minutes! Drain and rinse!
Add all the ingredients together in a big salad bowl and toss with dressing. This salad can be prepped beforehand because it tastes better as it sits - perfect for bbq potlucks! .

While hubs and I enjoyed Asian salad with fried tofu, munchkin got a modified version of it. I told her the fried tofu was “ham” and she ate her ham. 🤣 She also showed interest in the salad, so I gave her more almond slices, which she thought were crackers. She is anti-rice at the moment. 🤷🏻‍♀️

Here’s a simple Asian salad dressing recipe.
✔️ 2 tbsp soy sauce
✔️ 2 tbsp rice vinegar
✔️ 2 tbsp honey
✔️ 2 tbsp sesame oil (I use 1 tbsp sesame oil and 1 tbsp hot red chili sesame oil)
✔️ 1 tsp minced garlic
✔️ 1 tbsp water
👉🏻 combine the ingredients and mix well.

Firm tofu was coated with salt and potato starch. Pan fried on all sides till crispy. -

Here’s a little story. I met my husband March 2009, went out on our first date in April and then November that same year we were engaged. In May 2010 we were married. Somewhere in there we celebrated a Valentine’s Day I can’t remember 🤷🏻‍♀️. I knew I was going to marry him even before our first date. Everyone thought I was crazy but my heart knew.
